In honor of Enkutatash (Ethiopian New Year) I’m sharing my recipe for recipes Beef Kitfo with Awase. Kitfo is the ultimate celebration dish in Ethiopia, and played an important part of my wedding feast. It can be refined, as it is here, but at its simplest, it’s chunks of raw beef tossed in a spiced butter and then dunked in a spicy dip. There are a lot of versions of spiced butter in Ethiopia, but mine is closest to that made by my wife Maya’s tribe, the Gurage. | Marcus Samuelsson
